Perfect Breakfast Biscuits

Fast and easy, these biscuits are great on their own or with jam or honey. The egg wash is the key to the crispy top and keeps the biscuits tender.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup (1 stick) cold salted butter, cut into small pieces
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/2 cup greek yogurt or non-fat sour cream (optional)
  • 1 beaten egg

Makes about 8 biscuits.

Instructions

  1. Preheat oven to 450F.
  2. Spray a cookie sheet with cooking spray. You can also use a cast-iron skillet or round cake pan if you want them to rise and cook close together.
  3. Combine flour, baking powder, and salt in a large mixing bowl.
  4. Add the cold butter to the bowl and cut the butter using a pastry cutter or two knives or forks until it resembles a coarse meal.
  5. If using yogurt or sour cream, fold in. Slowly add the milk, stirring with a fork until just combined.
  6. Using a large spoon, drop dough into the greased pan. If using the cast iron or cake pan, group the biscuit neatly together.
  7. Brush the tops of each biscuit with beaten egg and bake in the oven for about 12 minutes, or until the biscuits are evenly browned.
