Apricot Coconut Bites

1 1/2 cups unsulfured dried apricots
1 cup shredded or flaked unsweetened coconut
1 tablespoon coconut oil, melted

1/2 cup or more, dark chocolate chips
1 tablespoon coconut oil, melted

Place apricots, coconut, and coconut oil into a small food processor and pulse until a rough paste forms. Shape mixture into balls using a tablespoon measuring spoon or miniature ice cream scoop, pressing the contents tight to form a half ball.  Place bites onto a tray and freeze for 10-15 minutes to firm up.

Combine raw chocolate chips and coconut oil into a small ball and microwave or melt in a double boiler until smooth. Remove bites from the freezer and one at a time, quickly dip into the raw chocolate mixture. I like the entire top of the bit covered in chocolate but you could do half or drizzle over the top. It will set instantly. Store in the refridgerator or freezer in a airtight container.
