My go to recipe for an easy, hands off polenta side dish for dishes like spicy shrimp or seared duck breasts. It goes into the oven and needs a stir midway… that’s it.
Ingredients
- 3/4 cup yellow cornmeal
- 1 1/4 teaspoon salt
- freshly cracked pepper to taste
- 3 cups water
- 1/4 cup milk
- 2 tablespoons butter
Instructions
Heat oven to 425 degrees.
Whisk together the water, cornmeal, salt and pepper.
Cover and bake for 30 minutes, stirring halfway through.
Remove from the oven and add the milk, butter. Stir through until the polenta is smooth and creamy.
