Biscuita Regina

Affectionately referred to as “Aunt Libby Cookies” these are the perfect Italian cookie. They aren’t sweet, have a very subtle flavor – perfect with coffee or after-dinner drinks.  Some people add a 1/4 teaspoon of ground cinnamon or almond oil but I prefer it without.

Ingredients

  • 4 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup Crisco
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • Sesame seeds

Instructions

  1. Lightly toast the sesame seeds in a saute pan over medium/low heat.
  2. Sift flour with sugar, baking powder and salt.
  3. Cut Crisco into the flour mixture and make a soft dough.
  4. Whisk together eggs, milk and vanilla and add to the dough.
  5. Form the cookies into two to three-inch logs and roll them in sesame seeds. You could brush them with a little milk before rolling in seeds if the seeds aren’t sticking.
  6. Bake at 375 degrees until lightly browned on the bottom.
