
Ingredients
- 1 ½ c. all-purpose flour
- ½ tsp. baking soda
- ¼ tsp. baking powder
- ¼ tsp. salt
- ¾ c. sugar
- 1 c. finely shredded unpeeled zucchini (do not squeeze or dry shredded zucchini)
- ¼ c. olive oil
- 1 egg
- 1/4 cup fresh lemon juice (or about 1 large lemon)
- lemon zest from one large lemon
- 1 cup raw, fresh, whole cranberries
Instructions
Step 1: Mix all of the dry ingredients together.
Step 2: Mix the zucchini, olive oil, egg and lemon juice and zest together to combine.
Step 3: Add the wet ingredients to the dry ingredients. Once combined, add the whole cranberries to distribute evenly.
Step 4: Pour into a lightly greased (olive oil spray works) loaf pan and bake at 350 degrees for 50-55 minutes or until golden brown and set.
