Pasta with Clams

Dad says no cheese with fish. However, I am a fan of the grated cheese on linguine with clams. I also like to add fresh chopped tomatoes and extra fresh chopped parsley when serving.

2 cans chopped clams or fresh if possible
1/8 in olive oil
2 cloves garlic, diced small
couple pinches crushed red pepper
couple pinches black pepper
1 handful fresh Italian parsley, chopped
water
1 pound linguine pasta
grated cheese

In medium sauce pan over medium heat, heat 1/8 inch olive oil (slightly more than covering bottom of pan).
Add garlic to pan and saute until garlic begins to smell. Add clams to oil and garlic but reserve the clam juice.
Add salt, pepper, red pepper and parsley. Add equal amounts water and clam juice. Cover and simmer. Boil water for the pasta. Cook pasta, drain and toss in clam sauce. Top with grated parmesan.
