Veal & Peppers

This is a simple meal and easy to prepare. One pan (plus the rice cooker) and you are ready to serve in under 30 minutes.

1 pound cubed veal
3 red bell peppers
3 long Italian frying peppers
1 medium onion
2 cloves garlic
1 medium size can of whole packed tomatoes
1 1/2 cups rice, steamed
salt & pepper to taste

In a large frying pan, saute veal until browned. Remove veal from pan but leave the juices in the pan. Saute peppers, onions and garlic until limp. Add cut tomatoes and simmer about 10 minutes. Add veal and cook another 15 minutes. Serve over rice.
