Lemon Chicken

Easy, flavorful and a weeknight staple when I was a kid. The pan juices are good for dunking Italian bread… just saying.

Ingredients

  • 1 whole chicken cut up or 6 chicken breasts
  • 2 cloves garlic
  • salt and pepper
  • oregano
  • 2 lemons
  • olive oil

Instructions

  1. Heat oven to 350 degrees.
  2. Wash and pat chicken dry.
  3. Place chicken in stainless steel baking pan and drizzle with a tiny bit of olive oil and sprinkle with salt.
  4. Bake at 350 degrees turning after 1/2 hour and again 1/2 hour later.
  5. Once the chicken is cooked (about 1 hour total), smash 2 cloves garlic.
  6. Place garlic in a small bowl with a good pinch of dried oregano and a pinch of salt.
  7. Squeeze the 2 lemons into the bowl and add about the same amount of water as lemon juice.
  8. Toss the mixture with a fork and pour over chicken. Use a flat spoon to scrape the bottom of the pan and work into the liquid.
  9. Cook about 10 minutes more.
